HOW TO MAKE BURGERS ON THE STOVE
- Split the ground beef into 4 or 6 even parts, depending on your serving size.
- Form the patties. Take each portion of ground beef and gently shape it into a round, flat disc about 1 inch thick. Press down a little in the center to make a small dip, and smooth out the edges into a circle. The patty should look a bit like a frisbee and be a little bigger than your burger buns.
- Heat the pan. Put a small piece of butter or a teaspoon of oil in a griddle or large frying pan, and warm it over medium heat.
- Toast the buns. If needed, do this in batches. Place the bun halves cut-side down in the warm butter or oil. Toast them until the inside turns golden brown.
- Turn the heat up to medium-high. Watch the pan closely. When you see a little bit of smoke, it’s time to start cooking the burgers.
- Cook the burgers. Place the burger patties in the hot pan, leaving a little space between each one. Work in batches if necessary. Generously season with salt and pepper, and cook for 3 to 4 minutes.
- Flip the burgers. Use a spatula to carefully turn the burgers over. Sprinkle salt and pepper on the other side, and cook for another 3 to 5 minutes, depending on how well done you like them.
- To make cheeseburgers. If you want cheeseburgers, add a slice of cheese right after flipping the burgers. If the cheese takes too long to melt, cover the pan with a lid or something similar to help it melt faster.
- Finish the burgers. Once the burgers are done cooking, place them on the toasted buns and add your favorite toppings.
